This is probably my most technically testing cake to date.

First off I completely underestimated the number of blossom I would need and ended up having to make another 200 on top of the 200 I had already made.

I then had to centre dowel the 4 layers and 4 blocks which is not as easy as I thought it would be.

Perhaps the most difficult element was lifting and transporting it. It weights a tonne and my husband had to drive my car so that I could sop it from moving too much as although dowelled you still get an incredible amount of movement due to the Styrofoam compressing.

It’s so gorgeous! You really nailed the perfect sharp edges! That’s why I haven’t done any square cakes, too many corners and edges!! Love the ombre effect of the blossoms!

Toni, I used to dread square cakes but not any more. I always use a drum to maintain the square shape and for the corners I use a pair of square Edgers which draws it in to a perfect 90 degrees. http://www.edgers.co.uk/new_html/side_edger_new.html
