Kirsty 4 Tier Square Blocked Wedding Cake

This is probably my most technically testing cake to date.

First off I completely underestimated the number of blossom I would need and ended up having to make another 200 on top of the 200 I had already made.

I then had to centre dowel the 4 layers and 4 blocks which is not as easy as I thought it would be.

Perhaps the most difficult element was lifting and transporting it. It weights a tonne and my husband had to drive my car so that I could sop it from moving too much as although dowelled you still get an incredible amount of movement due to the Styrofoam compressing.

Toni, I used to dread square cakes but not any more. I always use a drum to maintain the square shape and for the corners I use a pair of square Edgers which draws it in to a perfect 90 degrees.
