White & Dark Chic

This is the cake I decided to do for a gentleman who is turning 60 and who is also a judge. His wife wanted a big 60 on the cake and allowed me to use whatever I want for deco. She also wanted the cake to be covered with ganache only (no fondant)… I had asked for help in the forum to gather ideas about what to do; and I thank everyone who took the time to answer… All your ideas are saved!!!
It is a 9 " 4-layer chocolate cake, with chocolate ganache in between layers (using Valrhona Guanaja 70% chocolate – my personal favorite), covered with a layer of ganache, then ganache-buttercream and the top layer is just ganache. The free form lattice is made with white Lindt chocolate.
The judge’s wife was really pleased with the outcome! They are having it tonight :-)
