My Daughters Wedding <3
My daughter became the proposal in Iceland under the clear skies and nothern lights, so the design for her wedding cake was immediately in my mind. But I was struggling with the interior of the cake, as the wedding was in Spain.

The small sample cake I had made in Germany with a lemon Swiss Meringue did not pass the try-out, my youngest daughter just said " No, Mamá, you can do more!..". So the sponge cake filled with “butter cream” turned into fine biscuit filled with mousse ;) The upper one 16Ø x 20cm (H) with lemon wine mousse, the lower one 20Ø x 20cm (H) with mascarpone mousse and raspberry mirror. As my daughter doesn’t like fondant, I had to leave my comfort zone again and decided to work with hand-painted ganache… I´m a bit crazy to get involved with unfamiliar techniques at my daughter’s wedding and at 38C° !!…this was no easy matter

Anyway, all turned out perfectly… also the sweet table with about 400 Maracons, cakepops, choux au craquelin, etc etc…
