I was asked to make a cake for the high school kids where I work full time. (cake is part time for now) I wanted the cake to be over the top. Many of the kids in my community lost their homes in Hurricane Irene, this past August. Many are still displaced. This is a full sheet cake stacked with a hexagon pan under the igloo. Igloo is rkt. The Merry-go-round, has an rkt base. Royal icing was used to hold the giant candy cane and smaller blue candy canes in place. Penguins were made with fondant mixed with tylose.
