Fathers' Day Cake

Always making cakes for others. Wanted to do something special for the hubby. He loves coconut so found a recipe on Pinterest for “the best coconut cake you’ll ever make”. They did not lie. Thank you Goreti & June!! I made the 3 layer 9" cake but they did adjust the recipe for 2 layers. I suggest going w/that b/c 3 layers was too much for us. Fortunately it can be frozen and hubby will be able to have his coconut cake fix for a while…lol. Also I would suggest maybe spreading the coconut out on some paper towels to absorb not all but some of the moisture. I never would’ve thought to pair cream cheese frosting w/coconut but it really goes well. I think next time I will try one of the fruit fillings they suggested as well. Enjoy ladies!!
