This lemon cake was adorned with ‘Glass Sugar Shards’ to honour a 40th birthday.

The ‘glass’ reflected the colour of the brush strokes on the buttercream near the bottom of the cake.

Inside was lemon curd, vanilla SMB and raspberry coulis.
