This was made for my uncle in law on his 60th birthday. He is a lecturer in GMIT in Galway and is the reason I have such an interest in pastry. He encouraged me to do a course in culinary arts and pushed me to enter all of the competitions. If it wasn’t for him I would never even have dreamed of entering anything. Everything on this cake was edible and made from ice wise which I love working with. The hat was biscuit cake.
