This was a royal iced royal themed cake that I made for a competition during a Royal Visit by HRH the Princess Royal . She cast her eye over all the entries and I am very proud to say that I was runner up. Princess Anne spoke to me and was very complimentary.
First time ever using Royal icing to ‘properly’ ice a cake and to do the coat of arms…… not perfect by any means but I was happy enough with the outcome. Cake is a madeira sponge deep bake, 2 layers and about 7-8" high. My flowers were made using a piece of cake’s flowerpaste- really great to use . And see if you can spot the snails and the caterpillars hiding in the garden. In some ways I think the back of the cake is prettier than the front. Imagine my joy when I found guardsmen ribbon !

The day itself was horrendous rainfall but extremely high humidity inside the marquee……… the cakes literally melted and fell apart during the course of the day. I lost the gates but otherwise it held up. I am not a trained chef, whereas all the other entrants were. No pressure then !!
