Spiral cakes kill me. I’ve done several, & this one turned out the best yet, but I still had some engineering problems. I was trying to keep the servings down & not make a huge cake. But then the middle tier was WAY too big so I had to cut a lot of it away to get it to fit. I was DETERMINED to get three full slopes on the front on the cake.
Bottom tier is a luscious carrot cake with raisins, nuts & coconut, with cream cheese filling. Middle tier is dark chocolate cake with chocolate silk buttercream filling. Top tier is White Velvet with White Chocolate buttercream filling.
Road signs are edible images. The decor is fondant & buttercream.
