This cake was made for a friend’s mum for her birthday. He gave me complete freedom to do whatever I wanted (YAY!!!) and I have to admit, this design was not what I had originally planned.

I made a triple layer cake as I had planned on stencilling the side of the cake with a gorgeous 6" high lace stencil. As I lay in bed the night after I had ganached the cake, thinking about what colour I would choose for the fondant, I remembered that the lace stencil I had planned on using I didn’t actually own…..I had a complete brain freeze!!!! I remembered that when I was ordering the stencil there were two in the set, a beautiful high lace, and a much shorter one…I ordered the shorter 2" one thinking it would be more useful – AAAAAHHH

Anyway, after having a “WHAT AM I GOING TO DO” moment, I decided to go with the ombre ruffle design. It is something I have wanted to do for so long, and I am really happy I did. It was so beautiful – the photos just don’t do it justice.
