I was so excited about making these cakes. The couple who were married in Mauritius had arranged to have a party here a couple of months later. They wanted to carry on the tropical theme into the party and after seeing my Hummingbird Cake that I made last year for Cake International they wanted something similar.
I suggested maybe having three cakes rather than one big one. The side cakes are representing the sea and the sunset with the central one based around tropical plants, flowers and the birds are ones from the area. The red one is a Red Fody and the yellow brown one is called a Village Weaver.
The detail was painted using Cocoa butter and the flowers all wired and made from flower paste (gumpaste).

When it came to this week everything went wrong, parents were supposed to help with looking after the kids and then got ill so couldn’t help and then I also had to deal with my sons party and the last week of school. It meant that I barely slept that week going to bed at 3am and 4.30am the night before. Considering how tired I was and the added nightmare of one of the cakes going all bumpy thanks to white ganache everything turned out perfectly in the end.

Flowers were all firsts for me -
Frangipani, Vanilla Orchids, Gingko leaves, Anthuriums ,Ferns and Medinilla Berries.

I was also a guest at the wedding and was touched by the constant comments from friends and family and being included in the Father of the Brides speech where I got a round of applause from the room. The bride is keeping all the sugar flowers and still have a tier left to share with others.

Julia this cake tested me in ways I never ever want to experience again!! I hate working that late but it was the only way and it’s no one’s fault just bad luck that things didn’t go to plan. Thankfully it was all rescued and it turned out even better than I imagined :)
