And for reasons better known to them……Ash who asked me to bake this cake for his lovely lady Marie has a pet name for her which is ‘Sponge’!! ……….I’m not asking………but hence the theme of the cake.

However, I have to admit I was very impressed he took so much care to make sure I knew it had to be wheat free, gluten free and even dairy free.
So after help from you lovely cake heads here on CD I mixed, matched, and tried out recipes to come up with a Polenta, orange, coconut and carrot cake.
Very moist and fruity with mixed spice and ground almonds too.
I googled and researched to make sure everything I used was ok including the fondant.
All in all a very nice cake I’ve banked for use again and if you’re interested in the recipe I’ll post it as an update to the original forum I posted asking for help with GF recipe ideas.
