The young man that I made the cake for graduated from high school this past week end and is headed to Texas Tech University, his grandparents alma mater and who are my clients. I lived in Lubbock for nearly 30 years, so I bleed Red and Black. They wanted a cake that would travel nearly 50 miles, so they wanted everything flat. Raider Red and the Double T’s are made out of gum paste. Even the outlining was extruded gum paste. The cake is covered with ganache and LMF.
