This is a chocolate sponge filled with dark chocolate MBC, crumbled meringues en raspberry jam. The last few days the weather was really windy here in the Netherlands (I actually got blown of the dike when cycling to work – doesn’t get any more Dutch then that guys) so I thought it would be fun to make the top decoration look like it’s blown around.
