I had so much pleasure from making this cake, and the thought of spring after Christmas helps to lift the winter blues too.
I don’t get to make many wired flowers, as most of my cakes are fun celebration style cakes.
So I haven’t had much practice making sugar flowers.
Snowdrops, primroses, hellebores and cherry blossom are some of the wonderful spring flowers we have here in Britain, so here are my efforts to replicate them.
I know the scale isn’t quite right, but I still had fun with them, and I love the way they come to life when you start to colour dust them.
This Birthday cake was for Elaine’s Mum whom I made Daisy and Charlie dog cake for this time last year.
The flavour is lemon sponge with vanilla and stem ginger filling.
