This has been this year’s anniversary cake for Lion King, the musical. An order for which I collaborated with the Main pastrycook Tomás of Confectionery Holguera in his workroom at Madrid. The cake was of sponge cake of chocolate to the orange, ganache mounted of chocolate with milk and cutlery of ganache of black chocolate and fondant. The decorations are of black and white chocolate Callebaut. We enjoy very much this special order.
