I made this cake back in August for my friend’s surprise 40th birthday party. She loves the sunshine, so I decided on a Sun, Sea, Sand & Sky theme. The ‘sea’ is made up of 136 ombré effect letters spelling out ‘Happy Birthday Cath’ round the cake.

I used Not Just Cakes By Annie’s cloud cutters and put cling film over the fondant before I cut them to give them a rounded edge (tip I learnt from Lesley Wright from The Royal Bakery).

The ‘sand’ is not quite how I would have done it, but I left my husband to put it on once we’d made the hour and a half journey there while us girls went with my friend for a spa day, so the guys could get the surprise party ready while we were gone. As the cake travelled from London to Wiltshire for the party I didn’t want to do it at home and then have sugar all over our car!
