A cake created to promote a wonderful event for a great cause—-Carole King’s daughter Louise Goffin was performing at Gram Parson’s daughter’s farm to benefit the Gram Parsons Foundation & also to celebrate the release of her new album “Songs From the Mine”.

RajiWorld Promotions created & promoted the event, & the graphic artist created this really cool, wild pop art tree for The Twilight Series logo, poster & promotional materials. It’s such a statement piece that I wanted to showcase it on the cake. In the poster, there is a rainbow of purple, royal blue & teal behind the tree. So the cake itself became the rainbow backdrop & the tree is an edible wafer paper image on gumpaste.

The promoter is both vegan AND gluten free, which posed a really unique challenge for my baking skills. After an epic fail involving cake crumbled all over my countertop, I finally got the recipe right & the top tier of the cake is BOTH Vegan & Gluten Free——a Dark Chocolate Chip cake, filled with vegan strawberry ‘not-butter’cream, iced with vegan chocolate ‘not-butter’cream icing & covered with fondant I made with vegan (no gelatin) marshmallows. Whew! It was incredibly delicious, but I had a really hard time keeping it from crumbling. It managed to hold together enough to look somewhat like a square, although not nearly up to my normal ‘square corner & sharp-edge’ standards.

The bottom tier is a regular cake—-my favorite Lemon Velvet cake, filled with Lemon Meringue Buttercream, iced with Lemon White Chocolate ganache. I had such a wonderful time, & enjoyed meeting everyone so much!
