A chocolate mud cake layered with ganache, disguised as a wave. I got my inspiration from a cake made by Anne Heap. The customer supplied me with photographs so I could add personal details on the model. Such as design on surf board and wet suit. The character is made from modelling chocolate, cake is coated in buttercream and the foam is royal icing.
