This was my last cake I baked for the week especially made for our dear church pastor, Ptr Ray’s 70th birthday. This is a Mocha Chiffon Cake with Chocolate Mocha buttercream frosting. And knowing that he’s got a challenging blood sugar level, I made sure that this is a cake that he can eat and enjoy without suffering high sugar level…sugar-controlled cake! Is it possible to have a beautiful and delicious cake with less sugar??? Yes it is!!! It was a challenge but it worked!
