This is a pillow cake for a 50th birthday. The shoe is made of fondant/gumpaste and completely edible. We two-toned the fondant with purple on the bottom and biege on top with white royal accents. 10 inch and 6 inch tiers are of yellow cake and filled with chocolate mousse and oreo cookie crumbs. Ruffles are everywhere these days, and recently I had a bride want ruffles on her wedding cake. But not fondant ruffles – Oh no, she wanted butter cream ruffles. So I took a few hours to figure them out and I documented the process. Let’s start with an image of the technique, almost completed:

I don’t think I have ever felt as nervous as I did when travelling to the first day of the Myer Emporium Shoot. Having been on countless shoots over the years in Sydney, I have become used to knowing the people I work with. If I didn’t know the photographer, then I knew the stylist, or the art director or at least had worked in the studio before, but this was so different.
