I searched everywhere for a chocolate ganache recipe using Andes mints and really never found a good one. So, I made my own. It set up to a very nice consistency for me and hopefully it will for anyone else who tries it. I figured I’d go ahead and posted it so I won’t forget it and to help out anyone else looking for a mint ganache recipe :).

Since my husband and I are now eating a vegan diet at home I have started to try out some vegan cakes for family gatherings. This pumpkin spice cake was a big hit and no one could tell the difference. A nice alternative to chocolate or vanilla.

This cake is super moist and has golden syrup to really add depth to the flavour. For best results, use the best quality ingredients you can find. I have had this recipe hand written into my cookbook after copying it out of one of mums books, its been around a loooong time, so dont know who gets original credit…but its super yummy!

Caymancake’s Pink Velvet Cake
Ingredients:
2 1/4 C all purpose flour
2 1/2 tsp baking powder
1/4 tsp salt
1 1/2 sticks unsalted butter, softened (about 3/4 C)
1 1/2 C white sugar
4 large eggs

Ingredients:
4 1/2 C sifted all purpose flour
3 C white sugar
1 C good quality unsweetened cocoa powder
1 C vegetable oil
3 C water (or you can substitute 1 C of water for 1 C of almond or soy milk for a denser/richer cake)
3 tsp baking powder
1/2 tsp salt
1/4 C vanilla flavoring or 2 Tbsp of pure vanilla extract

BOURBON CHOCOLATE CAKE
a good friend from NY sent me a scan from a weekly magazine. and this cake is just AMAZINGLY delicious! and it also works out if you prepare it with glutenfree/lactosefree products!
