A bride called and wanted an orchid lei for a grooms cake. How fun is that??? It was to match the brides cake and the other tropical flowers I made. This was so fun to put together after I made all those tiny orchids..
I couldn’t wrap the wires like usual since I couldn’t turn the lei I had to just wrap the tape around and keep the lei still. It was a bit difficult and slow going but I did it all without breaking any flowers.
I took this photo on a straw hat for display.

I’m very excited! I just got hired to make my first wedding cake ever.
I was asked to make my cousin’s engagement party cake this past saturday. She liked it and that’s how she ended up asking me to make her upcoming wedding cake. I’m thrilled about it. I have about 6 months to get myself and my stuff together so I can do a great job for her.
I know this cake, if I can pull it off will open doors for me. So I’m starting to get ready now so when the time com...

This a tutorial on using a pasta maker to create perfect horizontal stripes on fondant or modeling chocolate.
1. Take your chosen base colour of fondant or modelling chocolate and pass it several times through the pasta maker set to its widest setting, until you have a nicely formed, regular shape band of fondant.
2. Take pieces of fondant in your chosen colours for the strips and press each of them into thin bands. It does not matter if they are not quite as long as the base band.

Hi, bakers, if anyone has a cherry/banana cake recipe that you’d like to share, PLEASE, post it – you’ll be helping me out of a jam (no pun intended). I just got an order for a Mother’s Day cake and the client wants a white cake with a cherry-banana filling.
I’ve never done this combination – but I would think that a cherry filling is quite sweet and maybe a chocolate cake might be better… but since I’m not sure, I will welcome your recipes!...

This cake is super moist and has golden syrup to really add depth to the flavour. For best results, use the best quality ingredients you can find. I have had this recipe hand written into my cookbook after copying it out of one of mums books, its been around a loooong time, so dont know who gets original credit…but its super yummy!
8oz Self Raising Flour4 Tablespoons Cocoa4 oz sugar (1 cup)2 tablespoons golden syrup1 1/2 cups hot water1 teaspoon bicarb soda3oz butter (3 tablespoons)v...

Or am I just a weirdo? Whether I am working on a cake, or planning one, or even in between cakes…I dream about them. I get some of my best ideas in my sleep. A way to make it look the way I want, or a technique to try. I guess that just goes along with having a passion. This is my passion. Decorating cakes is the best form of creative expression I have found.. for me anyway. I get told a lot that I under-charge for my cakes. How do you charge someone for giving you the opportuni...
