Best Chocolate American Butter Cream Icing (Crusting) This chocolate butter cream is absolutely lush and has a nice, rich brown color. It crusts well, so you can use the Viva method to smooth it. It also pipes beautifully. By far my favorite recipe for chocolate ABC when it comes to taste. Recipe doubles and triples well! Ingredients 1 cup salted butter, softened (2 sticks) 6 to 8 ounces unsweetened, bittersweet, or semi-sweet chocolate (or any combination) 2 tablespoons clear ...
Ruffles are everywhere these days, and recently I had a bride want ruffles on her wedding cake. But not fondant ruffles – Oh no, she wanted butter cream ruffles. So I took a few hours to figure them out and I documented the process. Let’s start with an image of the technique, almost completed: Pretty, huh? The best part is, you only need 2 tips to accomplish this look! I have seen a rose tip used to make ruffles, but I have found that the Ateco Tip 070 is absolut...
This is the most popular post on my blog, and the most viewed video on my YouTube channel, because it’s something we all have struggled with. In this video tutorial, I will show you my method for getting my cakes ice-rink smooth. And as an added bonus, I will provide my buttercream recipe below the video window. This technique works best with an all butter icing. Feel free to try it with your own recipe, but I am providing my “kids” butter cream recipe if you want to...
I searched everywhere for a chocolate ganache recipe using Andes mints and really never found a good one. So, I made my own. It set up to a very nice consistency for me and hopefully it will for anyone else who tries it. I figured I’d go ahead and posted it so I won’t forget it and to help out anyone else looking for a mint ganache recipe :). Ingredients: 3 oz Unsweetened Chocolate (I used Bakers brand); chopped 12 oz Andes Mints (the candy, not the chips is what I used); c...
This was a cake that I was scared to make. I’ve never made a number cake by carving but thought I’d have a go. The only thing was the date had been brought forward a week argh!I research and found a brilliant plan for what cakes were needed for number cakes and started bakingThe cakes were cooked and cooled it was time to cut into the 5 and 0The zero was fine and looked like the diagram but the number 50 didn’t look right so I called on Mr Kirstie’s cakes for advis...
My good friend had been in touch and asked if I could make a special cake for her grand parents 60th diamond wedding anniversary. They wanted the original wedding cake creating with an edible photo inset to. I started googling and came across the magenta picture above and sent it to them as an idea of how the picture would look. The next thing I new this was what they wanted this exact cake which is actually a photo frame not a cake :-/I rose to the challenge and started figuring ...
Sorry I have to state here it was all Mr Kirstie’s Cakes fault that this cake for looked over lol it was for his mum he should have reminded me haha although the main reason was the 50th birthday cake that got brought forward a week so I just carried on from original date in my cake diary :-/ Ok so 3pm and I realise its my mother in laws birthday (she screams)The plan for her cake was a knitting basket but that went out if the window.I knew her favourite colour was duck egg blue ...

I’ve been working on some of the characters for the competition cake again this week. I’m quite pleased with them so far, but there’s loads to do yet. Also this week I’ve been trying out recipes and icing techniques for Christmas biscuits…yes Christmas seams to arrived early to my kitchen this year! I’m preparing ready for my Craft Stall later in the year and don’t want any nasty surprises with soggy biscuits or the taste not being just right....
Not been happy over Xmas that I havnt been able to get in the kitchen due to myself and everyone else been ill :-(That hasn’t stopped me planning though the photos above are what I’ve collected to make my daughters 19th birthday cake for the 20th of January. I have the idea in my head and on paper so I just need to perfect it in practice. I’m really looking forward to making this :-)
