Best Chocolate American Butter Cream Icing (Crusting)
This chocolate butter cream is absolutely lush and has a nice, rich brown color. It crusts well, so you can use the Viva method to smooth it. It also pipes beautifully. By far my favorite recipe for chocolate ABC when it comes to taste. Recipe doubles and triples well!

1 cup salted butter, softened (2 sticks)

I searched everywhere for a chocolate ganache recipe using Andes mints and really never found a good one. So, I made my own. It set up to a very nice consistency for me and hopefully it will for anyone else who tries it. My good friend had been in touch and asked if I could make a special cake for her grand parents 60th diamond wedding anniversary. I’ve been working on some of the characters for the competition cake again this week. I’m quite pleased with them so far, but there’s loads to do yet.
Also this week I’ve been trying out recipes and icing techniques for Christmas biscuits…yes Christmas seams to arrived early to my kitchen this year! I’m preparing ready for my Craft Stall later in the year and don’t want any nasty surprises with soggy biscuits or the taste not being just right....

Sorry I have to state here it was all Mr Kirstie’s Cakes fault that this cake for looked over lol it was for his mum he should have reminded me haha although the main reason was the 50th birthday cake that got brought forward a week so I just carried on from original date in my cake diary :-/

Not been happy over Xmas that I havnt been able to get in the kitchen due to myself and everyone else been ill :-(That hasn’t stopped me planning though the photos above are what I’ve collected to make my daughters 19th birthday cake for the 20th of January.
