Normally at this time of year I have all the teachers presents sorted, normally something personalised or unusual but this year I bought a house mould from lakeland. I have had some interest in “how to” on this cake, so here is a tutorial to help along the way.
Carved and ganache chocolate cake (apologies I do not have photos of the smoothing process) I then covered it with flesh coloured fondant.
Then I covered with blue fondant that I previously had cut a pattern and did the same for the burgundy coloured fondant too.

This tutorial is the technique that I came up with that made it easier for me to make sure that I got straight even sides and a completely flat top every time I ganached a cake. The technique I came up with is kind of a mix of the upside down method that everyone knows about and the technique used by Faye Cahill where she uses two boards (one on top and one on bottom) to help ganache her cakes. I have always wanted to make chocolate mmf. I had a good recipe for basic mmf, so I knew I just had to play with it to get what I wanted. I purused the internet looking. I took what I liked best, used my basic recipe and tweaked it. Came up with a winner. It is positively yummy.
INGREDIENTS:
1 16 oz bag mini marshmallows
2 tblsp chocolate syrup…. like Hershey’s, or whatever brand you like
2 tblsp corn syrup…. dark or light, doesn’t matter

Ingredients:
4 1/2 C sifted all purpose flour
3 C white sugar
1 C good quality unsweetened cocoa powder
1 C vegetable oil
3 C water (or you can substitute 1 C of water for 1 C of almond or soy milk for a denser/richer cake)
3 tsp baking powder
1/2 tsp salt
1/4 C vanilla flavoring or 2 Tbsp of pure vanilla extract
Directions:
Sift dry ingredients together and whisk well.
Add wet ingredients and mix well.

Best Chocolate American Butter Cream Icing (Crusting)
This chocolate butter cream is absolutely lush and has a nice, rich brown color. It crusts well, so you can use the Viva method to smooth it. It also pipes beautifully. By far my favorite recipe for chocolate ABC when it comes to taste. Recipe doubles and triples well!
