I can remember watching Dr.Seuss’ “How The Grinch Stole Christmas” every December since I was little. The 1957 book was adapted into a short film during the 1960′s. It alway mesmerized me, these cupcake where inspired by The Grinch. You won’t believe how entertaining and easy to create these adorable cupcakes. The embellishments have endless possibilities, start by sketching your cupcake on paper. I… For more information and supply list »
I was asked to design Santa Claus cupcakes for a client’s office party, as luck would have it Sydney was home for Thanksgiving break. I must admit it was exhilarating to be baking along side Sydney. I love when we work as a team and I take full advantage of our family time! The Santa Claus cupcakes were inspired by the movie “Santa Claus is Coming to Town.” Originally I had sketched out for elves and the big man himself (Santa Claus);… For recipe and materials list »
During this day of thanks, Thanksgiving I wanted to take the time to show you my appreciation for your support and comments. I thought it would be deliciously perfect to share one of our favorite holiday French macaron recipes. Prepeare you mise en place for the shells and meringue. Pre your mise en place Place the almonds, powdered sugar, and cherry powder in a food processor and give them a good pulse until the nuts are finely ground.Next sift the tant pour tant (almon...
I have been wanting to create a tutorial on the art of scroll piping with royal icing. It is easier to learn on a sugar cookie prior to an entire cake, piping an entire cake can take hours (even days depending on design and layers), while a cookie is not as time consuming. The candle light cookie was inspired by Eddie Spence’s book The Art of Royal Icing: A Unique Guide to Cake Decoration by a World-class Tutor (this would be a… For additional information »
I wanted to share a quick royal icing technique, wet on wet. Wet on wet is a method of using a royal icing constancy of 10-12 seconds to top outline, coat, and decorate your cookies in a few minutes. For the poinsettia cookie above it literally took me 3.5 minutes to outline, cover, and decorate. Once the wet on wet method was finished I allowed the sugar cookie to dry for about 2 hours, piped a snails trail boarded, and allowed the… Watch the video »
I was asked by a friend if I could bake him a batch of gluten free sugar cookies. I have baked several pastries in the past that were gluten free (mostly bread and pastries), but I realized I had never tried to bake a batch of gluten free sugar cookies. I realized their must be a plethora of children who are unable to have gluten in their diet and would love to be able to receive decorated sugar cookies. I felt compelled to be able to devise a well decorated… For recipe, poins...
I you on the previous post “Take Your Sugar Rose to Ultimate Level with wired Petals” to add a bonus video: adding calyx and rose hips. Generally in a finished spray the calyx and rose hips are only sightly visible on an open rose or a fully open rose. However on a bud, an opening bud, or a partially open rose the calyx and rose hip is quite visible. The calyx and the rose hip are an essential part of the sugar rose… For a full list about and where to purchase the materials/equ...
Well, we finally are ready to take our gumpaste roses to fully open from open rose (the fourth stage). In the spray above I have one bud, 2 partially open roses, 4 open roses, and 3 fully open roses. To achieve a realistic fully open rose I will show you how to wire the last 7 to 9 petals on your open rose. I have found by wiring the petals the rose is not only a realistic, but is stronger and easier to handle. Generally, I would have petal dusted the rose after the wired petals… ...

In the first two series we completed a rose bud and a partially open rose (the transition phase). On the last video we had taken the rose buds to transitioning from a closed bud to showing their petals. The next stage I will show how to begin to curl your rose petals backward towards the stems as they open and my method of dusting the rose to achieve the intense color.
