This tutorial is the technique that I came up with that made it easier for me to make sure that I got straight even sides and a completely flat top every time I ganached a cake. The technique I came up with is kind of a mix of the upside down method that everyone knows about and the technique used by Faye Cahill where she uses two boards (one on top and one on bottom) to help ganache her cakes. My technique as I say is a mix of both and hopefully you find it helpful. There are many way...
After seeing the amazing stained glass effect cakes by people like Queen of Hearts Couture Cakes, Way Beyond Cakes by Mayen and Vinism Sugar Art, I decided I wanted to have a go and put my own spin on it. Hopefully it will inspire you to do your own. Just warning you all now, I like to explain things in great detail so skip over anything you know. Background-Tips to help you Start This Project Decide on your cake theme based on your inspirations and the occasion if any, mine was a staine...
Gather your materials (add a ruler or straight edge to this list!) Knead in a little tylose powder to your coloured fondant. My ratio is 1tsp tylose to 250g of fondant. Roll ropes of fondant (now gumpaste!) to desired thickness. Keep one rope a little thicker than the rest. Here the green is slightly larger. This will help when it’s time to insert the toothpick supports. When you have all of your ropes, roll over them with a fondant smoother to neaten and to remove any finger ind...
This tutorial covers setting up the support structure and decoration of a “Tangled” Rapunzel Tower Cake as can be seen on https://www.facebook.com/CustomCakeDesigns .... This support structure was made for a cake that needed to cater for 70 desert size portions of cake. As it was a rather large cake, a strong ‘tower’ was needed to support the weight and hence plumbers plastic tubing / piping was selected as the main core of the tower. (This plastic tubing and ca...
This tutoriial is based in part on Fran’s Rose tutorial : http://www.youtube.com/watch?v=UYkPhb-_gDgbut includes wired petals. Take a 20 gauge wire and a small styrofoam egg. The egg should be no bigger than the petal size of a 100mm Jem “Easy Rose” cutter. Use a hot glue gun to attach some glue to the wire and then push the wire up into the base of the egg. Then choose a large petal shaped cutter- cutter is big enough if the egg fits within it when the c...

This is a tutorial to create a sculpted or 3D sitting dog cake like my ‘Freddie’ cake. You could adapt this to different breeds (even different animals!) and make it in a variety of sizes. I used a 14 inch board and two chocolate sponge cakes baked in 2 cup and 4 cup pyrex bowls. This isn’t a difficult cake to create but IS time consuming (it probably took me a total of 6 or 7 hours). Other ingredients/tools you would need are: buttercream to fill and cover ...
I have be decorating cakes for 3 months shy of two years now and have had many challenges decorating cakes in a climate that is always hot and humid. My little cake studio is just off of my office and I run the AC at about 77F to 80F ( electricity is super expensive in the Cayman Islands ) and as you can tell by my shiny face :0) in the video it is also very humid around 80 to95% most of the time. My butter cream cakes go to beach parties and beach weddings and never melt I used the online...
