I have been creating cakes for many years and specialise in Australian Aboriginal themed cakes. I am an artist by trade and married to Mundara Koorang, renowned Aboriginal artist, author, designer, educator and Elder of the Eora people of Sydney. I have been creating Aboriginal designed cakes for near 30 years. I still believe that I am an amateur cake decorator and I learn new skills everyday.
Humidity and gum past flowers
The biggest problem I have is the humidity. I left all the flowers under the aircon all night and in the morning brought them upstairs to add to the cake. A few hours later…you guessed it. Flowers drooping and damp. I could put them back under the dehumidifier for a while but transport is an hour away and by the time I got the cake to the reception, the flowers are once again damp and droopy. Does anyone have any suggestions of how they deal with this….
