Madison's 16th Birthday

This poor cake was a disaster! It started out as a Topsy Turvy cake and fell while I was putting the butter cream on. So, that first cake all got thrown in the freezer, and I started baking again. Once I got all of these layers done and cooled, I started fresh and chose to forget the fondant and the Topsy Turvy and just go with butter cream. When the client came to pick it up, she got out of the driveway, and down to the corner and called me stating that it took a nose dive in the back seat! So, back she came, and I was up until midnight trying to repair the damage. It was a mess.

Father's Day Beer Stein

This cake was a red velvet cake using the smallest spring form pans by Wilton, and then carved some to form it’s shape. Every two layers I placed a divider so that I could place cut skewers in between as supports, then ran a full skewer all the way through all layers and cardboard circles to keep it stable. I made the lid and handle out of gum paste and then painted it with silver sheen food coloring. The plate, pickle, pretzels, brat, and German bread were all made from gum paste and then chalked with petal dust the colors. The mustard was royal icing, along with the tree and trunk on the stein. The bottom cake was covered in fondant to look like a checkered table cloth. The foam on the cake was quite by accident. I had used a cooked flour icing and it kept sliding down the sides. Everyone thought I had done it on purpose. It ended up just adding to the whole composition!

Tufted Billow Weave Mother's Day Cake

Each month, I have been having a drawing in my community for a free cake giveaway. This is my May cake. It is a Lemon Sour Cream Pound cake with raspberry and butter cream filling and butter cream on the outside with lemon/butter/vanilla flavored mmf on the outside. I also covered the board with fondant then air brushed it with gold luster sheen. The buttons between each tufted billow were made using gum paste in a mold that I had made using a button. The little place card was an idea that I had gotten from a fellow caker named Shirley Wilson, and these are kind of her trademark. It’s made from gum paste. The flowers are silk. I was going to use real flowers until I realized that they were going to cost more than what the cake was worth, and I really stink at making gum paste flowers. It’s something I just need to sit down and practice doing.

Covered the cake in fondant, then I used a leaf cutter/vainer for the sides, and started with my lightest leafs at the top, and worked down the cake until I had my darkest leafs. Used a tiny forget-me-not gum paste cutter for the flowers at the base, and a larger five petal cutter for the ones on top. Used the 3” smallest pan by Fat Daddio’s.

It’s done in a cooked flour butter cream on red velvet cake. My poor poppies were not quite dry when I put them on, and they look a little floppy!
I used the Wilton small spring form pan to bake this cake in. Each cake was enough to serve small bites to each guest that she brought to her party. I served a peach colored punch made with apricot juice, 7-Up, a little maraschino cherry juice and orange juice, along with cream cheese mints and coffee. It was a lot of fun and all the guests were stuffed.

I poured the batter into the pans one tablespoon at a time alternating the chocolate and yellow right smack in the middle of the pans allowing the batter to spread naturally. This way it resembled a zebra print pattern when the cake was cut into. The cheetah spots were hand painted with food paste colors, but the zebra stripes were cut from fondant. The sweet 16 lettering was made using gum paste.
