Hi, I'm a home baker and cake decorator. I got made redundant 18 months. I decided to set myself up to sell cakes from home as its something I love and fitted in with my personal commitments. I also find that sugarcraft is very relaxing. I don't have a website but use facebook. My page is called 'Begona Bakes'. I wanted something clever as a business name but everything we came up had already been taken. In the end my husband came up with Begona Bakes, not terribly creative but it just felt right. It's one of my names, after my aunty, and ties in my Spanish background. Wish I had had the opportunity to do this years ago and I look forward to seeing all your wonderful creations and learning new skills.

Hi. Here is a vegan recipe a friend Ruhee Bhimani shared.

Vegan Blueberry and Oates Muffin (For 6 Muffins)

Ingredients:
1/3 cup Water
1tsp Vinegar
100gms All purpose flour
1/2 tsp Baking powder
1/4 tsp Baking Soda
100gms Castor Sugar
45ml Oil
35gms Blueberry
25gms Rolled Oats/Regular Oats

Method:

1) In a bowl mix water and vinegar.Keep it aside for 10mins
2) Sift the dry ingredients (Flour, baking powder, baking soda) and keep it aside.
3) Add sugar to the water- vinegar mixture and mix well until the sugar dissolves.
4) Gradually add in oil and whisk well to make an emulsion.
5) Now add all the dry ingredients and beat well to a smooth consistency.
6) Once the batter is ready add in Blueberries and oats by cut and fold method.(you can add 1tbsp of water to adjust the consistency if need be)
7) Line 6 muffin trays. pour the batter.You can sprinkle some oats from top!
😎 Pre- heat the oven at 150 degree C for 10mins
9) Bake at 150 degree C for 15mins (This temp works well with my oven, however if you feel your oven heating is slow then you can bake at 160 degree C)
