Squeezing this one in at the last minute just as the holidays are ending…I really loved making mistletoe for the first time this year. I love using greens so much – this was an easy choice for me. I made the bouquet first as a project for a tutorial, and then made a bunch of extra leaves and arranged them on a dummy cake to show how they could be used as a small arrangement.

I made a similar cake a few years ago but this one is a bit more refined…I love this combination – the green and white pop against the chocolate fondant. Seven inch tier decorated with flowers, buds and leaves.

The request from my client was very straightforward: clean, simple, modern and fresh. She loved ranunculus flowers but did not want a lot of them all over the cake. I mixed a single ranunculus with hydrangea, filler flowers, buds and leaves, using only a green and white color palette.

One from a few years ago…this was the first time I made ranunculus flowers for a client. She originally wanted a white cake, but I told her how much the flowers would pop against the chocolate fondant, and she absolutely loved it. Green and white is still a strong favorite at Petalsweet.
