      <title>Homemade ITALIAN CREAM CAKE</title>

        <![CDATA[<p><strong>Italian Cream Cake</strong></p>


	<p>This is the best recipe for this cake I have ever tried.  We eat it without icing all the time.  It is just that good.  Made some cupcakes just today.  Mmmmm :)</p>


	<p><strong>INGREDIENTS</strong></p>


	<ul>
	<li>2 CUPS SUGAR</li>
		<li>1/2 CUP SHORTENING</li>
		<li>1 STICK BUTTER</li>
		<li>1 CUP BUTTERMILK</li>
		<li>2 CUPS ALL PURPOSE FLOUR</li>
		<li>1 TSP VANILLA</li>
		<li>1 TSP BAKING SODA</li>
		<li>1 TSP SALT</li>
		<li>5 EGGS, SEPARATED</li>
		<li>2 CUPS COCONUT</li>
		<li>1 CUP CHOPPED PECANS</li>
	</ul>


	<p>CREAM TOGETHER SUGAR, SHORTENING, AND BUTTER.  ADD BEATEN EGG YOLKS, BUTTERMILK, AND VANILLA.  ADD DRY INGREDIENTS.  FOLD IN THE BEATEN EGG <acronym title="I BEAT THEM UNTIL FLUFFY">WHITES</acronym>.  FOLD IN THE COCONUT AND PECANS.  POUR INTO 3 PREPARED 9 IN PANS.  BAKE AT 350 FOR 30-35 MINUTES.  THIS IS EXTREMELY GOOD!!!</p>


	<p><strong>ICING</strong></p>


	<ul>
	<li>2 8 OZ CREAM CHEESE</li>
		<li>1 STICK BUTTER</li>
		<li>1 TSP VANILLA </li>
		<li>1 LB POWDERED SUGAR</li>
	</ul>


	<p>BEAT CREAM CHEESE, BUTTER, AND VANILLA TOGETHER.  SLOWLY ADD POWDERED SUGAR.  THIS ISN&#8217;T A CRUSTING CREAM CHEESE ICING BUT I LOVE IT!!!</p>]]>

	<ul>
	<li>2 cups self-rising flour</li>
		<li>2 cups sugar</li>
		<li>1 tsp soda</li>
		<li>1 tsp baking powder</li>
		<li>1/2 tsp salt</li>
		<li>1 1/2 cup wesson oil</li>
		<li>3 cups carrots</li>
		<li>5 eggs (separated)</li>
		<li>1 1/2 tsp cinnamon</li>
		<li>1-2 cups pecans</li>
	</ul>


	<p>Preheat oven to 350.  It take 40-50min to bake.  I mix all the dry ingredients and wisk them together.  I add the oil and egg yolks and mix well.  I then beat the egg whites until fluffy.  I fold them into the batter.  Then I fold the carrots and pecans into the batter.  It is really a simple cake to make.  It is also a very heavy cake with lots of ingredients.  It is quite delicious!!! One of my faves!!</p>


	<h2>Cream Cheese Icing</h2>


	<ul>
	<li>2 8oz cream cheese</li>
		<li>1 stick butter</li>
		<li>1 lb powdered sugar</li>
		<li>1 tsp vanilla</li>
	</ul>


	<p>Beat together cream cheese, butter, and flavoring.  Then slowly add sugar.  I like more cream cheese because I like to actually taste it in the icing instead of just sugar.  TFL!!!</p>]]>

      <title>very moist chocolate cake</title>

        <![CDATA[<p>it is for use with a 18&#215;12 pan.. i use large cookie sheet with high edges.. this is the best chocolate cake i have ever had hands down.  we have always called it brownie cake but it isn&#8217;t brownies..  ;)  pioneer woman makes a good version of it and she puts buttermilk in hers so i used hers.  it is awesome!</p>

	<p>cake</p>


	<p>2 cups all-purpose flour<br />2 cups sugar<br />1/4 tsp salt<br />1/2 cup buttermilk<br />2 large eggs<br />1 tsp vanilla extract<br />1 tsp baking soda<br />1/2 pound(2sticks) butter<br />4 heaping tblsp of cocoa powder<br />preheat oven 350 degrees<br />1) in large bowl combine the flour, sugar, and salt.</p>


	<p>2) in another bowl mix buttermilk, eggs, vanilla, and baking soda.</p>


	<p>3) in a medium saucepan, melt butter and add cocoa.  whisk to combine.  meanwhile, bring 1 cup water to a boil. when butter is melted pour in cup of boiling water.  allow to bubble for a moment and turn off heat.</p>


	<p>4) pour chocolate mixture into the flour mixture.  stir for a moment to cool chocolate.</p>


	<p>5) stir this into egg mixture.. stir until smooth and pour into ungreased pan.</p>


	<p>bake 20 minutes</p>


	<p>icing</p>


	<p>1 3/4 sticks butter<br />4 heaping tblsp cocoa powder<br />6 tblsp milk<br />1 tsp vanilla<br />1 pound powdered sugar<br />1/2  cup chopped pecans</p>


	<p>1) melt butter and add cocoa and stir until smooth<br />2) add milk and vanilla<br />3) add powdered sugar<br />4) add pecans<br />pour right onto hot cake and eat immediately!</p>
