Italian Cream Cake

This is the best recipe for this cake I have ever tried. We eat it without icing all the time. It is just that good. Made some cupcakes just today. Mmmmm :)

INGREDIENTS

  • 2 CUPS SUGAR
  • 1/2 CUP SHORTENING
  • 1 STICK BUTTER
  • 1 CUP BUTTERMILK
  • 2 CUPS ALL PURPOSE FLOUR
  • 1 TSP VANILLA
  • 1 TSP BAKING SODA
  • 1 TSP SALT
  • 5 EGGS, SEPARATED
  • 2 CUPS COCONUT
  • 1 CUP CHOPPED PECANS

CREAM TOGETHER SUGAR, SHORTENING, AND BUTTER. ADD BEATEN EGG YOLKS, BUTTERMILK, AND VANILLA. ADD DRY INGREDIENTS. FOLD IN THE BEATEN EGG WHITES. FOLD IN THE COCONUT AND PECANS. POUR INTO 3 PREPARED 9 IN PANS. BAKE AT 350 FOR 30-35 MINUTES. THIS IS EXTREMELY GOOD!!!

ICING

  • 2 8 OZ CREAM CHEESE
  • 1 STICK BUTTER
  • 1 TSP VANILLA
  • 1 LB POWDERED SUGAR

BEAT CREAM CHEESE, BUTTER, AND VANILLA TOGETHER. SLOWLY ADD POWDERED SUGAR. THIS ISN’T A CRUSTING CREAM CHEESE ICING BUT I LOVE IT!!!

Hi there!!!My hubby is Italian so will be trying to bake this cake to impress him) Did you say that it will be ok to make cupcakes with this recipe ? As sometimes cake recipe doesnt work for cupcakes)))

When you say to fold in the beaten egg whites…do you mean just plain egg whites stirred together or get the egg whites and whip them with a whisk until soft peaks form and then fold in?
