Does anyone know what kind of difference it makes in a cake if you use gluten free flour, ie rice flour? Do you need to use a different amount?

It makes a HUGE difference. I suggest sticking to gluten free recipes, don’t substitute! Most gluten free recipes require other ingredients like Xanthan Gum or potato starch.
