This tutorial is the technique that I came up with that made it easier for me to make sure that I got straight even sides and a completely flat top every time I ganached a cake. The technique I came up with is kind of a mix of the upside down method that everyone knows about and the technique used by Faye Cahill where she uses two boards (one on top and one on bottom) to help ganache her cakes. Ingredients:
For the cake
1 1/4 cups cake flour
3/4 tsp baking powder
1/2 tsp salt
1/4 cup milk
1 Tbsp vanilla bean paste
4 Tbsp unsalted butter
3 large eggs + 3 egg yolks, at room temp
1 cup sugar
For the coffee syrup
8 Tbsp strongly brewed coffee
1/4 cup sugar
For the frosting
1 cup heavy cream
8oz mascarpone
1 tsp vanilla
1/2 cup powdered sugar
Unsweetened cocoa powder, for dusting

This is a tutorial for making sunflowers without having to shell out for cutters. I’m a total cheapskate and I was worried the cutters wouldn’t arrive in time in any case, so decided to try doing them freehand.
